Up-town Shoo-Fly-Pie

Crumbs:

1 cup flour
1 cup brown sugar
Dash of apple pie spice
Dash of salt
1 table spoon shortening

Work with hands to form crumbs, set aside.

Filling:

1 brown egg
3/4 cup boiling water
1 teaspoon baking soda
1/4 cup golden barrel blackstrap molasses
1/4 cup golden barrel corn syrup
1/4 cup golden barrel table syrup
3 oz Philadelphia cream cheese (softened)

Spread the cream cheese in the bottom of the unbaked pie shell. Beat egg; add to molasses. Add baking soda to boiling water. Stir; mix well. Save 1/2 crumbs for top of pie add the rest of the crumbs to this mixture. Pour into pie shell. Bake for 35 minutes at 375 degrees. Top with the 1/2 crumbs. Bake 10 more minutes.


Piņon Pie

1 8-inch baked pie shell
1/4 cup real butter
3/4 cup brown sugar, firmly packed
4 eggs
1 cup light corn syrup
1 cup pinon nuts
1/4 teaspoon salt
1 teaspoon lemon juice

Cream butter and brown sugar. Beat in eggs one at a time until mixture is light and fluffy. Beat in the corn syrup. Stir in nuts, salt and lemon juice. Pour into baked pie shell and bake at 375 degrees for 30 to 40 minutes. Serve plain or with whipped cream or ice cream.



Pecan Pie

For the crust:

1 1/2 cups all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon salt
1 1/2 cups (3 sticks) cold unsalted butter, cut into small pieces
2 egg yolks
4 tablespoons ice water
1/4 teaspoon almond extract

For the filling:

4 eggs
3/4 cup pure maple syrup
1 cup packed dark brown sugar
1 teaspoon vanilla extract
1/2 cup (1 stick) unsalted butter
2 cups chopped pecans
10 to 12 whole pecans, for decoration
Optional: Whipped cream or ice cream

1-To prepare the crust, place the flour, sugar and salt in a food processor fitted with a steel blade; mix to combine. Add the butter and process until the mixture resembles coarse meal.

2-Add the egg yolks, ice water and almond extract, then process until the dough just comes together at the sides of the bowl. Wrap the dough in plastic wrap and refrigerate for 1 hour.

3-Preheat the oven to 350 degrees.

4-Roll the dough between two sheets of waxed paper to fit a 10-inch pie plate. Drape the dough into the plate, trim it to fit, and crimp the edges decoratively. Place the prepared pie crust in the refrigerator to chill while preparing the filling.

5-place the eggs, maple syrup, brown sugar and vanilla in a bowl and whisk to combine.

6-Place the butter in a small saucepan and melt over medium-low heat until it becomes a light brown color. Do not burn it. Pour the browned butter into the filling mixture and whisk to combine. Reserve.

7-Place the chopped pecans in the pie shell and cover with the filling. Decorate the top with the whole pecans around the edge. Bake in the center of the oven for 1 hour, or until filling is set and crust is browned. Cool on a rack and serve at room temperature with a dollop of whipped cream or ice cream.
